Chicken
8 chicken thighs and drumsticks
2 cups buttermilk
1 tbsp hot sauce
2 tsp salt
1 tsp black pepper
Coating
3 cups all-purpose flour
2 tsp paprika
2 tsp garlic powder
1 tsp onion powder
1 tsp cayenne pepper
1 tsp black pepper
1 tsp salt

In a large bowl, combine the buttermilk, hot sauce, salt, and pepper. Add the chicken and refrigerate for at least 4 hours, preferably overnight.
In another bowl, mix the flour, paprika, garlic powder, onion powder, cayenne, salt, and black pepper.
Remove the chicken from the marinade and coat each piece thoroughly in the seasoned flour, pressing firmly to create a thick crispy crust.
Heat the oil to 350°F (175°C).
Fry the chicken in batches for 12–15 minutes, turning occasionally until golden brown and fully cooked.
Transfer to a wire rack and let rest for 5 minutes before serving.
Serve with fries, coleslaw, or biscuits.
